Vines planted in 2001 on Opok soil, from the lower part of the Ho-henegg hill. Grapes are hand harvested into small crates, manually
selected and destemmed. Grapes are left on skins overnight, andthen slowly and gently pressed. Spontaneous fermentation happensin old French barriques, the wine then spends 12 months in largeneutral oak casks. Bottled without fining or filtration, no sulfuradded.
